Gluten Free Charcuterie – Spinach Balls
On March 18, 2021 by Pam2 – 10 oz. packages of frozen spinach OR 10 cups of fresh spinach (stems removed) and soaked in bowling water for 3 minutes and then drained, squeezed and chopped
1 cup of grated parmesan cheese
3 eggs
1 cup of breadcrumbs or 1 cup of almond flour
1 tablespoon of Italian spice mix
1/2 teaspoon of salt
1/2 teaspoon of pepper
1/2 teaspoon of garlic
2 tablespoons of psyllium husk (optional)
Preheat oven to 350 F or use air fryer at French Fry setting. Add all ingredients to the spinach, mix (I do it with my hands but, you can use a spatula). Form balls (add more flour or crumbs if it is to wet). Place balls on a sprayed cookie sheet or the sprayed racks form your air fryer – spray the tops or brush with egg. Bake for 20 minutes until the tops are golden brown. Serve with dips like tomato sauce, guacamole, mustard, hummus, tzatski, etc.
