Chickpea Salad on Wraps or Flatbread
On March 23, 2021 by PamI can of chickpeas, drained and rinsed
3 tablespoons of mayo
3 teaspoons of lemon juice
1/4 teaspoon of salt
fresh ground black pepper
1 1/2 teaspoons of mustard
1 teaspoon of curry powder
1 glove of garlic
2 teaspoons of dill (fresh or dried)
Chop in the food processor and scrape into a bowl.
Add celery (2 stalks), green onions (3 or 4), dill pickle (about 1/4 cup), red/yellow or orange pepper (about 1/2 of a pepper), cucumber or zucchini (about 1/2 of a large), shredded carrot (1 large), sunflower or pumpkin seeds (1/4 cup). You can add all or some of the above. I stir it all together and serve on wraps, pitas or flatbreads or just lettuce.
