Do you need a quick and easy meal? This one is so great….you can stir fry some broccoli to go with it.
1 1/2 cups of apricot jam
2 tablespoons of soy sauce
2 teaspoons of ginger
1/2 cup of water
Bring to a boil and simmer until slightly thick – you can add a little cornstarch if you want it thicker.
3 chicken breasts, cut into fingers or cubes
I mix with 3 tablespoons of olive oil and season with salt and pepper and air fry for 25 minutes at 400 F.
You can also dip in one beaten egg and dredge in a mixture of 1/2 cup rice flour and 1/2 cup cornstarch and 1 teaspoon of ginger and then spray with olive oil and either pan fry or air fry.
You just mix the sauce with the chicken when everything is ready and serve on rice. Drizzle with chopped green onion.
