Easy Shortbread Logs

5 cups of almond flour
8 tablespoons (240 grams) of melted butter
1/2 cup of maple syrup
2 teaspoons of lemon juice and 1 teaspoon of lemon zest
1/4 teaspoon of salt
**you can also use almond extract and slivered almonds (1/2 cup) or 1/2 cup of chocolate chips with peppermint extract or orange juice)

Mix everything together until combined. Roll into 1.5 diameter logs. Cover in plastic wrap. Refrigerate for 15 minutes.
Preheat oven to 350 F. Cover baking sheets with parchment or spray with coconut oil.
Cut logs into 1/4 inch rounds. If you want them a rounder shape (then tend to go oblong from cutting), roll them in a ball and flatten with a glass before baking. Bake for 12-14 minutes. I got 50 cookies because I kept my small – for a little treat with tea or coffee.
You can dip in chocolate and nuts to make them fancier if you make them plain.
