
Twice Baked Sweet Potatoes
On May 3, 2021 by Pam4 medium sized sweet potatoes (washed)
You can put them in the instant pot for 20 minutes on high pressure or you can bake them at 350 F for 1 hour.
I created a topping while they were baking/cooking:
1 onion, diced
3 cloves of garlic diced
1 yellow pepper, diced
1 cup grape tomatoes, cut in half
1 lb. of ground turkey
1 can of kidney beans (you could use chickpeas, or any other kind of canned beans)
2 cups of cheese (any kind) I used marble
1 teaspoon of cumin
1 teaspoon of smoked paprika
1 teaspoon of salt
1/2 teaspoon of pepper
3 green onions, sliced
You could add diced carrots, spinach, broccoli…really anything to the mix.
Saute the onions and garlic until slightly browned (I used a combination of 1 tablespoon olive oil and one tablespoon butter). Add the turkey and brown. Add the spices and cook for 2 minutes more. Add the yellow pepper and tomatoes and saute for 5 minutes. Add the kidney beans and any other vegetables that you like.
Cut the sweet potatoes in half and lay them in a greased 9×12 pan. Cover them with the filling. Sprinkle green onion over the top and cover with cheese. Bake at 400 F for 20 minutes.
