Samosa Patties

Boil about 8 medium potatoes (wash, leave the skins on). Mash with a potato masher – they can have afew lumps. Cool. Add 2 eggs and 1/2 cup of breadcrumbs.
Saute in 6 tablespoons of butter and 2 tablespoons of olive oil (melted) – one diced onion, 1 cup of peas and 1 carrot, diced. Add 1 tablespoon of cumin, coriander and curry to the frying pan. Stir and dump the mixture into the potato bowl. Form patties. I air fried mine for 24 minutes at 400. You can also pan fry them in oil.
Serve with guacamole or sour cream.
