
Gluten Free Celebration Cupcakes

Preheat oven to 350 F
Spray a muffin pan or use liners.
6 tablespoons softened butter
3/4 cup of sugar
2 large eggs
1 tablespoon of vanilla
1 1/4 cups of gluten free all purpose flour – check for xanthan gum (if not, add 1 teaspoon)
1 3/4 teaspoons of baking powder
1/4 teaspoon of salt
1 cup of cream or buttermilk or sour cream
Cream the butter and sugar until smooth. Add the eggs and vanilla and mix until fully combined. Add the flour, baking powder and salt until incorporated. Pour in the cream/buttermilk or sour cream and mix for 2 minutes until smooth. Fill the muffin tins or cups to 3/4 full. Bake for 25 minutes. Cool completely before frosting.


Buttercream Frosting
3/4 cup of butter, softened
1 tablespoon of vanilla
4 cups of icing sugar
3 tablespoons of milk
Cream butter until smooth – add vanilla and then add sugar one cup at a time and mix until combined. Add the milk and beat until smooth. Spread on with a knife or use a piping bag…add fruit or sprinkles, chocolate chips or candy to decorate.
