Saskatoon Berry Jam
Saskatoon Berries are a rare find around Niagara. It is a unique little berry that is making its way East from Saskatoon, Saskatchewan and all across the prairies to just around the corner. The are rich and earthy in their flavour – almond like – and they are high in iron and Vitamin C. I was SO excited to find them at our local market – DeVries Fruit Farm.
750 grams of Saskatoon berries
50 g of water
575 grams of sugar
30 grams of fresh lemon juice
1 tsp of lemon zest
Crush the berries using a handmixer or potato masher and add all the ingredients – leave to set for 8 hours.
Heat slowly until the juice starts to flow – you can crush them more as they start to heat. Bring to a boil and heat to 220 F. Ladle into prepared, hot jam jars. Leave a 1/4 inch head space. Wipe rims and place boiled, hot lids and caps. Tighten and place in a canner. Jars should be covered with water and processed for 15 minutes.
