
Time for Pie….
On August 21, 2021 by PamDo you want to know my trick for making pies? Yes – I sometimes buy a pre-made shell. There are lots of recipes for making pie dough and you can do it but, in the heat of summer, when you would rather be outside, making pie dough makes NO SENSE. So, buy 2 shells – use one for the bottom and roll out the other one for the top and PRESTO – you have pie.
Peach Pie Filling
5 cups of sliced peaches with 2 tablespoons of lemon juice
1/2 cup of flour (I use gluten free all purpose)
1/4 cup of brown sugar
1 teaspoon of cinnamon
1/2 teaspoon of nutmeg
1/4 teaspoon of salt
2 tablespoons of butter
1 egg
Mix the flour, sugar, cinnamon, nutmeg and salt together. Add it to the peaches and lemon juice and mix with a spatula. Pour it in the pie shell. Dot with butter. Make a lattice top or solid top – if you use solid, remember to poke air holes or slits in the top with a knife or fork. Beat one egg and brush over the top.
Bake at 400 F for 10 minutes – reduce heat to 350 F and cook for another 25-30 minutes until the crust is brown.
Let cool completely before serving.
