Gluten Free German Apple Pancakes
On December 24, 2021 by PamThis is a great breakfast for any special occasion – we love them on Christmas morning – or just on a lazy weekend morning. Serve them with maple syrup, fresh fruit and breakfast sausages.
This recipe makes 2 – 9 inch square glass pans but, it can be easily doubled to make more.
Put 4 tablespoons of butter in each pan. Turn oven to 400 degrees. Put the pans in the oven to melt and brown the butter while you prepare the apples.
Peel and slice 2 large of 4 small apples.
When the butter is melted, spread the apples in the plan sprinkle with 1 teaspoon of cinnamon and 1 teaspoon of brown sugar. Bake for 8 minutes.
While the apples are baking, in your mixer or blender or food processor, add 1 1/2 cups of milk, 6 eggs, 1 1/2 cups of gluten free all purpose flour, 1 tablespoon of baking powder, 1/2 teaspoon of xanthum gum, 3 tablespoons of sugar, 1 teaspoon of vanilla extract, 1 teaspoon of cinnamon
When the apples are done, poor 2 cups of the batter in each pan.
Bake for 20-25 minutes. (They may fall when they come out of the oven).
Flip on to a plate, cut and serve.
