
New Year’s Eve Charcuterie
On 2022-01-02 by PamLike most people, we spent a quiet evening welcoming in 2022…COVID looms and we weren’t interested in crowds. We took a walk – it was a beautiful, sunny day and planned to watch a movie, and in our case, crochet, knit and, go to bed early with a good book. A bottle of wine and baked camembert with sour cherry jam, home made oat crackers, bacon wrapped scallops, caramelized onion and apple with honey-whipped goat cheese on homemade flat breads, olives, pickles and homemade cheese from our friend, Frank. Parties and restaurants are generally over-rated…a quiet evening at home is where it is at.
Oat and Walnut Biscuits
1 cup walnut pieces
I cup old fashioned oats
1 1/2 cups of oat flour
2 tablespoons of brown sugar
1 teaspoon of salt
1/2 teaspoon of baking soda
1/2 cup of buttermilk
1/4 cup of butter – melted
Preheat the oven to 350. Pulse the oatmeal and walnuts in the food processor until they are finely ground.
Add the oat flour, sugar, salt and soda and pulse to combine. Pour in the buttermilk and butter and pulse until the dough comes together.
Turn out onto a floured surface and bring the dough togethers. If it is too wet, knead in a little more flour.
Roll out the dough to 3/4 inch think. Cut with a 2 1/2 inch cookie cutter. You can prick the crackers with a fork if you like that look – the dough will not rise or puff up.
Bake on an ungreased cookie sheet for about 20-25 minutes. Cool on a rack. Store in an airtight container.
