A Hearty Breakfast on a Cold Morning
On January 16, 2022 by PamBaked Oatmeal can be thrown together the night before and kept in the fridge to bake in the morning or easily mixed together in the morning and ready in less than an hour. It is healthy and delicious and a favourite in our house.
1 1/2 cups of oatmeal
1/2 cup of milk of any kind – buttermilk, oat milk, almond milk, coconut milk, etc.
1/3 cup of brown sugar or maple flakes or maple syrup or coconut sugar
1/4 cup of melted butter or coconut oil
2 eggs
1 teaspoon of baking powder
1 teaspoon of cinnaon
1 teaspoon of vanilla extract
dash of salt
1 cup of fresh or frozen fruit, blueberries, cranberries, peaches, raspberries, strawberries
3/4 cups of chopped nuts (walnuts, almonds, pecans)
Preheat oven to 350 and spray a 9 inch square pan.
Mix all ingredients except fruit and nuts in a bowl.
Add the fruit and nuts. Spread in the pan and bake for 30 minutes.
This makes 4 large pieces – if you need more, double the recipe and bake it in a 9×13 pan.
