Baked Saffron Lobster Dip
24 large Medjool Dates
5-6 ounces of goat cheese
24 almonds
12 pieces of proscuitto
Open the dates, take out the pit and remove the stem on the end. Put an almond inside, fill with goat cheese. Wrap the date in 1/2 piece of proscuitto – bake for 20 minutes at 400 F or put in your air fryer for 10-15 at 400 F.
2 lobster tales (small)
1/2 cup of mayo
4-5 strands of saffron
1/4 teaspoon of salt
1/2 cup of cream cheese
1 cup of breadcrumbs (divided – 1/2 for the mix and 1/2 for the top)
2 green onions
1/2 teaspoon of smoked paprika
Take the meat out of the lobster tales and chop it up finely. Add all the other ingredients and stir. Use a mini pie plate or mini baking dish, spray with oil, add the mixture…sprinkle with bread crumbs and spray the top with olive oil. Bake at 350 F for 30 minutes or put in the air fryer at 400 F for 25 minutes.
