Maple Cranberry Almond Oatmeal
Hearty and wholesome – 8 basic ingredients – a great snack and a very healthy breakfast…..I always make a double batch….so, I have written the recipe as a double batch.
5 cups of rolled oats
2 cups of any kind of nuts – we use a combination of almonds and pecans
1 teaspoon of ground cinnamon
1 and 1/3 cups of dried cranberries (added after the first 20 minutes of baking)
1/4 teaspoon of salt
1 cup of maple syrup
1/2 cup of melted coconut oil
2 teaspoons of vanilla
Preheat the oven to 300 F. Line 2 large baking sheets with parchment paper.
Toss the oats, almonds, cinnamon and salt in a large bowl.
Add the maple syrup, coconut oil and vanilla.
Stir until all the oats are moistened.
Divide between the prepared baking sheets and bake for 20 minutes – then sprinkle the cranberries evenly over the two baking sheets. Stir and bake for another 15 minutes. Allow the granola to cool completely so that it gets a crunchy texture. Store in a resealable plastic bag.
