Asian Style Turkey Meatballs in Ginger Soy Broth

450 g learn ground turkey
1/2 cup of gluten free bread crumbs
2 green onions or scallions, minced
2 cloves of garlic, finely grated or pressed
2 teaspoons of grated ginger
2 teaspoons of gluten free soy sauce
Mix all ingredients in a bowl and form into small balls – refrigerate for 10 minutes. Bake in air fryer (sprayed with olive oil) for 15 minutes at 400 F or in the oven for 15-20 minutes at 400 F.
Ginger Soy Broth
2 teaspoons of olive oil
3 large heads (or 6 small heads) of bok choy, quartered
2 carrots, thinly sliced
2 green onions, thinly sliced
2 slices of ginger
1 clove of garlic, grated or pressed
2 cups of chicken broth or turkey broth
2 teaspoons of lime juice
1 teaspoon of gluten free soy sauce
Heat oil in saucepan over medium-high heat, cook bok choy, carrots and half of the green onions until slightly softened (3-4 minutes). Add ginger and garlic and cook for 1 minute. Stir in meatballs, borht and 1 cup of water; bring to a boil. Reduce heat, cover and simmer for 5 minutes. Stir in lime juice and soy sauce. Serve in soup bowls and sprinkle with green onions.
