Grilled Flatbread Pizza with Artichoke, Ricotta and Lemon
This pizza variation is delicious – you can use pre-purchased flatbread or pizza crust – anything – we used Charles’ homemade flatbread and we did not pre-bake it. We just added the ingredients and threw it on the grill at 400 F for 40 minutes.
1 1/2 cups ricotta cheese
zest and juice of one lemon
3/4 teaspoon of freshly ground black pepper
Beat together until creamy.
Brush the flatbread with oil (you have enough for one large or two small – depending on how thick you want your cheese layer).
Spread the ricotta mixture on the flatbread.



1 1/2 cups of marinated artichokes, chopped
1/2 lemon thinly sliced (we used marinated Mediterranean lemons)
1 cup baby spinach and 1/4 cup basil leaves
crushed red pepper flakes for serving
Spread the chopped artichokes and lemon over the top of the pizza, top with spinach or basil or both…bake.
