10 pounds of chopped green tomatoes 5 cups of brown sugar 4 cups of chopped red onion 2 cups of raisins 2 cups of currants 4 cups of apple cider vinegar 4 tablespoons of candied ginger, chopped 4 tablespoons of fresh ginger, chopped 4 tablespoons of mustard seed 4 teaspoons of chile pepper flakes 4 teaspoons of fennel seed 4 teaspoons of salt 2 teaspoons of allspice 1 teaspoon of ground cloves 4 cinnamon sticks 1/2 teaspoon of ground nutmeg
Mix everything in a large, heavy bottomed pot. Bring to a boil. Cover and cook for an additional hour -stirring every 15 minutes. Sterilize jars – keep warm in the oven – boil rings and lids. Fill jars to 1/2 inch from the top – put on lids and tighten rings. Process in a water bath for 20 minutes.
