
Fall is Here – How about Soup Sunday?
On September 27, 2022 by PamA few years ago, when I was working fulltime, I started the Soup Sunday tradition. Each Saturday, I would make a batch of homemade soup and then on Sunday, instead of cooking a big meal, we would have soup and crackers or soup and homemade biscuits or bread. It is SO relaxing to just have a delicious bowl of soup and relax on Sunday evening – especially if you are heading off to a busy week ahead at work.
Here are two of my favourites….
Roasted Tomato Soup
10 roma tomatoes, cubed
1 large red onion, sliced
4 cloves of garlic, sliced
Spread these out on a baking sheet lined with foil.
Sprinkle with 1 teaspoon of basil, 1/2 teaspoon of oregano, salt and pepper, 2 tablespoons of balsamic vinegar and 1/4 of olive oil.
Roast at 425 F for 45 minutes. Puree in a food processor or with a hand mixer. Add 1 quart of homemade or store bought chicken or vegetable broth. Sprinkle fresh thyme on the top to serve.
Instant Pot Potato Leek Soup
Using the saute setting, melt 1/4 cup or butter and olive oil. Add 4 sliced leeks and 4 cloves of minced garlic. Saute until garlic is fragrant and leeks are soft. .Add 2 tablespoons of flour and cook until light brown. Add 8 cups of cubed potatoes, salt, pepper, 1/8 teaspoon of nutmeg. Hit the “soup” setting on your instant pot. Use your stand mixer to puree. Serve with chives and sour cream.
