I am always looking for an easy breakfast treat. If I am rushing off somewhere in the morning or if I am having friends in for coffee, I love serving something nutritious, tasty and fun. These egg “muffins” are just the thing – serve them with muffins or scones, or breakfast cookies…bacon or sausage…and a great cup of coffee. They are easy to make, as usual, I adjusted the recipe a bit by adding extra eggs.
8 eggs, cracked into a bowl and whisked
Add…1/2 cup of chopped spinach, 1/2 cup of chopped bell peppers, cherry tomatoes and grated cheddar cheese. Stir together and add 2 teaspoons of dried basil, 1/2 teaspoon of rosemary leaves and 1/2 teaspoon of pepper and 1/4 teaspoon of salt.
Bake at 375 F in muffin tins that are greased or use muffin cups. I have some silicon baking cups so, I used those and they were perfect. I used a 1/4 cup measure to fill my cups almost to the top and then sprinkled a little extra cheese on each one and baked for 18 minutes. Let them cool 5 minutes – they can be served right away or frozen and reheated.
