
Have you ever grown a cucamelon?
On August 3, 2023 by PamThanks to my friend, Melissa, I have grown cucamelons for a couple of years. They are also known as “mouse melons” or Mexican miniature watermelons. They taste like a cucumber and you can literally stand in the garden and eat them, raw, from the vine. Yesterday, I picked a bowl full of cucamelons and today, I decided to “pickle” them.
I put 1/4 teaspoon of mustard seed and dill in with the cucamelons and then made some pickling brine.
I boiled 2 cups of water, 2 cups of vinegar, 1 tablespoon of sugar and 3 tablespoons of kosher or pickling salt. Bring the mixture to a full boil. Turn it off and let it sit for 10 minutes.
Pour into jars, leaving a 1/2 inch at the top for sealing. Boil lids and rings, put on jars, tighten and process, covered in boiling water, for 20 minutes.
