Healthy Summer Eating – Burgers and Fries

1 – 1/4 lbs of lean ground turkey
1 – 1/2 cups of finely chopped fresh spinach
4 ounces of crumbled feta cheese
2 cloves of minced garlice
1/4 cup of bread crumbs (I use gluten free)
1 tablespoon of Italian Seasoning
1 large egg
2 teaspoons of Worcestershire Sauce (I use gluten free)
1/4 teaspoon of black pepper
Mix together and shape into patties. We BBQ them to an internal temperature of 165 degrees F. Serve with whatever toppings you like – mayo, cucumber, red onion, tzatziki etc.
Air Fryer Yuca Fries
2 large yuca, peeled and cut into sticks
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried oregano
1/4 cup of olive oil
1/2 teaspoon of garlic powder
1 tablespoon of dried parsley
Place prepared yuca in a bowl of water. Set aside. Bring 2 cups of water to a boil and drain the yuca from the water bowl. Boil to 5 minutes. Transfer to a dry bowl, add oil and all the spices and seasoning. Spread out in your air fryer and “cook” until they are browned and cooked through (about 30 minutes)
Dip in mayo or tzatziki or ketchup, etc.
