
Grilled Peach Halloumi Salad with Basil Balsamic Vinaigrette
On August 19, 2024 by PamHello, halloumi…this salty, creamy grilling cheese tastes great with just about anything but especially when nestled in a salad alongside sweet grilled peaches, plenty of greens and fresh balsamic dressing. This salad is SO easy to put together and is a wonderful addition to any summer BBQ.
Dressing
1/4 cup of olive oil
1/4 cup fresh basil
3 tablespoons balsamic vinegar
1/2 teaspoon honey
1/2 teaspoon grainy mustard
I clove of garlic
1/4 teaspoon of salt
1/8 teaspoon pepper
I mixed this in a magic bullet – I keep the dressing on the side and serve it that way – just in case you don’t eat the whole salad and then you can eat it the next day.
2 large ripe peaches, sliced
8 ounces of halloumi, cut in 1/4 inch slices (the cheese easily slices)
4 cups of mixed greens
!/4 cup of chopped pistachios
Heat the grill and put foil on it – spray the foil with oil – layer on the peaches and the cheese. Spray oil on the top of the peaches and cheese. Grill at about 350-400 degrees. Flipping regularly until the peaches are soft and the cheese is browned. Lay the peaches on top of the greens, add the cheese on top and the pistachios to garnish.
