
Healthy Applesauce Muffins
On 2024-10-29 by PamThese muffins have NO sugar or eggs and they are “flexible” – you can add apple pieces, nuts, seeds, chocolate chips, oatmeal or whatever you want to add to customize them according to what you love in a good muffin. I actually love baking muffins because you can take the basic recipe and just make it into whatever you are hungry for. Add some peanut butter, dried cranberries, oatmeal, walnuts, pecans, you name it – grate some carrots, pull some old bananas out of your freezer and throw them in. Muffins are the perfect “everything but the kitchen sink” adventure. Bake a dozen muffins on Monday and eat them all week.
1 – 1/2 cups of almond flour
1/2 cup of coconut flour
6 tablespoons of ground flax
3 teaspoons of cinnamon
1 – 1/2 teaspoons of baking soda
3/4 teaspoon of salt
1 – 1/2 cups of unsweetened applesauce
6 tablespoons of melted butter
1- 1/2 teaspoons of vanilla extract
1 – 1/2 cups of any kind of milk (or even water)
4 peeled and chopped apples
1/2 cup of pumpkin seeds
Preheat oven to 350 degrees F. Grease muffin tins (12 large). Mix flours, flax, cinnamon, baking soda and salt in an electric mixer. Add applesauce, butter, vanilla, milk and combine – add chopped apples and pumpkin seeds and mix well.
Fill muffin tins and bake for 25 minutes.
