
Better Than Take-Out Cashew Chicken
On November 18, 2024 by PamThis dinner takes 20 minutes to prepare. It is great for a busy day and you can use thighs or breasts. You can serve it with rice or just in a bowl. It is REALLY delicious!
Cut up 4 boneless chicken thighs or 2 boneless chicken breasts. Put them in a large ziploc bag with 3 tablespoons of cornstarch and salt and pepper. Shake it so that the chicken is well covered and set aside.
Heat 3 tablespoons of sesame oil and 2 tablespoons of olive oil in a skillet. Add the chicken and two cloves of minced garlic. Cook for about 4-5 minutes. Add 2 tablespoons of minced ginger and 1 cup of shelled edamame – saute for 2-3 minutes. Add in 1 thinly sliced red pepper and two broccoli crowns that have been cut up – stir fry for 3 minutes.
Mix together 3 tablespoons of soya sauce, 2 tablespoons of honey , 1 tablespoons of rice wine vinegar, and 1 tablespoon of Asian Chili sauce and pour onto the chicken stirfry. Mix together and serve with cashews and green onions as a garnish.
