
Getting Ready for the Holidays….Bone Broth
On December 19, 2024 by PamIt is 5 days until Christmas Eve and in our house, that means that the broth must be prepared for the French Onion Soup. Yes, you can purchase beef broth but, there is really nothing that warms your heart (or smells better) than homemade broth being created in your kitchen. Tonight, I picked up beef “arm” bones from our local grocery store, Pupo’s and the large, sweet onions that will be caramelized (it takes about a day in the Instant Pot) with brown sugar, balsamic vinegar and butter and salt and pepper.
Tonight’s beef bones were browned on the saute setting of the instant pot. I used garlic flavoured olive oil and salt and peppercorns. After the beef was browned, I went into my vegetable drawer of my fridge and added leeks, celery and carrots and a few fresh herbs (rosemary and chives). When you make broth, you can add older vegetables from your fridge because the broth is drained away from the vegetables and they are not kept. I added cut up onions and cut up garlic and topped it off with water and red wine to hit the maximum level of the instant pot. in 45 minutes on pressure cooking on HI, you will have beautiful broth that can be put through a sieve and used for soup…in our case, Christmas Eve French Onion Soup.
