
Upside-Down Apple Cake
On 2025-02-23 by PamIn the winter, apple desserts are one of my favourites. Apples are a favourite ingredient to add to baking. Apples are a great sweetener (apple sauce in baking), especially when they are heated. This apple cake is great for a dinner party – it looks beautiful and is great for a birthdays or dinner party.
This particular cake is a birthday cake for Zachary’s 29th birthday…with sparklers.
Preheat the oven to 350 F. Grease a 9-inch round pan with coconut oil.
Heat 1/4 cup of coconut oil, 1/2 cup of brown or coconut sugar and 2 tablespoons of maple syrup in a sauce pan until fully combined and the ingredients are melted. Pour into the greased pan. Arrange pieces of apple on top (I cubed mine, but you can also arrange them in slices).
Mix 3/4 cup of brown rice flour, 2/4 cup of buckwheat flour, 1/2 cup of almond flour, 1 teaspoon of baking soda, 1 teaspoon of baking powder, 1/2 teaspoon of salt and 2 teaspoons of cinnamon together.
Whisk together, separately, 1/2 cup of brown or coconut sugar, `1 egg, 1/2 cup milk, 1/4 cup of unsweetened applesauce, 1 tablespoon of apple cider vinegar, 1/4 cup of melted coconut oil and 1 teaspoon of vanilla extract.
Add the wet ingredients to the dry and mix until combined.
Pour into pan and spread out. Bake for about 30 minutes…until knife or toothpick comes out clean.
Let cool for 15 minutes. Run a knife along the outside edge and then invert the pan onto a plate, slowly remove pan. YUM!
