Protein Cottage Cheese Waffles

These waffles are filled with goodness and SO delicious. They are a VERY healthy start to your day.
4 eggs
1 cup of cottage cheese
1 14tablespoon of olive oil
1 tablespoon of honey
3 tablespoons of psyllium husk
1/4 cup oat milk
1 teaspoon baking powder
1/2 cup of coconut flour or regular flour (coconut flour is high fibre)
1 tablespoon ground flax
1/4 teaspoon of salt
Beat all ingredients well. Allow to sit for 10 minutes while waffle iron heats up to medium heat. Divide into 6 equal portions and cook on waffle iron. Serve hot with fruit and syrup or peanut butter.
